Answer: Soraya was not able to see the mold before the fifth day because the bacteria was still devolving. I believe if she are the soup on the forth day she could have possibly gotten sick because of the bacteria in the soup.

She didn't see the mold growing because mold cells at the start are way to small for the human eye to see. Because of the growth after 5 days, it became visible. She would still get sick because the mold cells are still there, even though mold cells are too small for to see.
